Ingredients for Lasagna Roll-Ups:

  • 8 lasagna noodles
  • 1 tablespoon olive oil
  • 1/2 of a teaspoon of garlic powder or 2 lager cloves garlic minced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 1/4 cup grated Parmesan cheese, or to taste


Prep time 15m/Cook time 40m/Ready in 55m

  1. Preheat oven to 350 degrees.
  2. Bring a large pot of lightly salted water to boil.
  3. Cook lasagna in boiling water until cooked through but firm to the bite. About 8 minutes: drain and lay noodles flat onto a flat surface or in a bowl with olive oil.
  4. In a mixing bowl combine egg, spinach, ricotta cheese, mozzarella cheese. Stir the mixture until evenly combined.
  5. Spread a heaping 1/4 cup of spinach mixture or (pre-cooked ground beef if you preferer) into the middle of each noodle and roll firmly. Arrange rolled noodles into a baking dish and pour spaghetti sauce over the rolls. Cover dish with aluminum foil.
  6. Bake in preheated oven for 30 minutes. Remove foil from dish and continue cooking another 5 minutes. Sprinkle Parmesan cheese over the rolls to serve.
