Snack Time: Quick, Easy…and Vegan!

It seems that people are often turned away from being vegan because it is assumed that it is too complicated to eat ‘good’ vegan food. Hopefully these three recipes demonstrate that it is easier than it seems.

Pigs in a Blanket

Ingredients:

-Medjool dates

-Any kind of nut butter (for example, almond butter, peanut butter, or sunflower seed butter

-Coconut flakes

 Directions:

  1. Cut the Medjool date(s) in half along the length of the date
  2. Carefully remove the pit, making sure to keep part of the date attached
  3. Using a spoon or a knife, spread your nut butter of choice inside the Medjool date.
  4. Sprinkle with coconut flakes and enjoy!

Ingredients:

-1 1/2 frozen bananas

-A handful of any fruit of your choice (for example, berries)

-2/3 cup of orange Juice

-Toppings: granola, chia seeds, hemp seeds, coconut flakes, or anything you choose

Directions:

  1. Blend together the banana, the fruit and the orange Juice
  2. Pour the smoothie into a bowl
  3. Sprinkle with toppings as preferred.

Ingredients:

-Frozen Bananas

-Optional: cinnamon, Medjool dates, coconut flakes

-Water

 Directions

  1. Blend frozen bananas using a blender
  2. Add water as needed if bananas are not blending well
  3. Pour in a bowl, and sprinkle with toppings, if desired. Enjoy!
